Smoked Goose Breast
Smoked Goose Breast will keep at least 2 weeks after arrival if refrigerated in original vacuum tight package. Can also be frozen up to 2 months without affecting original flavor or quality. Must be defrosted slowly for at least 2 days in refrigerator before using.
Goose Fat will keep at least 4 weeks in the refrigerator or can be frozen for at least 6 months.
How to serve:
The Goose Breasts are smoked over real hickory wood chips until the flavors of the rich, dark meat and smoke blend together. It can be served cold or at room temperature. Slice thin and serve as an hors d'oeuvre or on a sandwich. Can also be sautéed to serve with eggs for breakfast, lunch or dinner. It is a smoky, lean and luxurious substitute for bacon. Try it instead of bacon on a toasted "GLT" sandwich with lettuce, tomato and mayonnaise. MSG - free!
Goose Fat is excellent for frying potatoes or spread it on rye bread and sprinkle with salt for a quick snack.
