Both will keep up to 2 weeks after arrival if refrigerated in original vacuum tight packages. Should packaging become loose - indicating an air leak - remove sausage immediately and wrap in paper towel. They can be frozen up to 2 months without affecting flavor or quality. Defrost slowly in refrigerator; do not thaw at room temperature. The Bavarian Meat Loaf will take at least 2 days to defrost.
Bavarian Meat Loaf: Defrost completely and remove plastic bag. Put loaf in baking pan with a little water on the bottom. Heat in a 325°F oven for 1-1/4 to 1-1/2 hours. Do not cover. Serve with mashed potatoes or fried potatoes and vegetable or a salad. Also good served cold, sliced for sandwiches. Serve with mustard. Swiss Cheese Knacker: Fully cooked in natural casing. Good on the grill or heated in water. To heat, bring water to a boil, drop in sausage, cover, and turn off heat. Let stand for 15 minutes until heated through. Good served with sauerkraut or potato salad.
